Obituary of Caroline Jane Ervin

Caroline Jane Ervin, 39, of Winter Haven, passed away at her home in North Carolina, Saturday January 28th.

Caroline — the most wonderful person, wife, mother and friend — was born February 20, 1983 in Fort Worth, Texas. The first-born daughter of Jane Stalnaker and Dave Holt - was one of a kind with a heart of gold. A friend who would turn herself inside out to make sure those around her were okay. She would never back down from telling us what was what. She was a tenacious, lovable soul with a contagious smile and unforgettable laugh. Caroline was taken from us long before she was ready. Before she had a chance to finish. Before she could see her family fully grow. The world is a little dimmer as we say farewell but how grateful we feel to have been a part of her story.

Caroline loved her daughters, Brittany Tacker (21), Haley Musgrove (20), and Penelope Ervin (9) and her husband Justin Ervin (42) more than anything in the world. She beamed with pride watching her girls perform in the marching band. She loved concerts and never passed a merchandise table without adding a t-shirt to her collection. No one felt less-than around Caroline. She was a dedicated friend who didn’t judge and truly listened. She was amazing at keeping in touch with friends - always reaching out with kind, humor-filled texts or loving gestures. She built a life she loved with her husband of 16 years — filled with joy, laughter, love, compassion and accomplishments. They made a great team and shared so many wonderful memories together.

Caroline showed genuine sympathy for those in need and found her calling as a registered nurse. She gained a hard-earned BSN from Polk State College and was amazing at her job.

She is preceded in death by her brother, William Gibson "Gib" Holt. In addition to Justin and the girls, Caroline is survived by her father, Dave Holt; mother, Jane Stalnaker; brothers, Thomas Holt and Bryon Hunt;, sisters, Nancy Hunt, Lauren Hunt and Anna Holt , and step mother, Dr. Nadine Pantano and Neal O'Toole and Suzette Massey Foster who remained positive influences in her life years after their official role as a stepparent expired.

Her loss will be felt deeply by so many who knew and loved her. We miss her so much. A Viewing will be held Saturday, February 4th at Northridge Church in Haines City, Florida at 11am, funeral service to immediately follow at noon. Private burial on Monday for immediate family.

In lieu of flowers, An educational fund has been set up at SouthState Bank for Caroline‘s daughters. Anyone wishing to contribute can make deposits payable to Justin Ervin starting on Monday, February 6, 2023. Thank you in advance for all who give, your contributions are a blessing.
